Ingredients
- 2 large sweet potatoes
- 1/2 cup feta cheese, crumbled
- 1/4 cup honey
- 2 tablespoons olive oil
- Salt and pepper to taste

Instructions
- Preheat the oven to 400°F (200°C).
- Slice sweet potatoes into 1/4 inch thick discs.
- Toss sweet potato rounds with olive oil, salt, and pepper in a bowl.
- Spread the sweet potato slices in a single layer on a baking sheet.
- Roast for 20-25 minutes, flipping halfway through.
- Remove from oven, drizzle honey over the warm rounds, and sprinkle crumbled feta on top.
- Garnish with fresh herbs if desired and serve warm.
