Tender, fall-off-the-bone beef short ribs, slow-braised to perfection, creating a comforting dish that evokes family gatherings.
Ingredients
- 2 lbs beef short ribs
- 1 cup organic mushrooms, chopped
- Salt, to taste
- Black pepper, to taste
- 2 tablespoons olive oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 2 sprigs fresh thyme
Instructions
- Season the beef short ribs with salt and black pepper.
- Heat olive oil in the Vitaclay cooker, and sear the ribs on all sides until browned.
- Remove the ribs and set aside.
- In the same cooker, add chopped onion and minced garlic, sauté until softened.
- Add chopped organic mushrooms and cook for a few more minutes.
- Deglaze with beef broth, scraping the bottom of the pot.
- Return the ribs to the cooker and add thyme.
- Set the cooker to the slow braise setting and cook for several hours until the meat is tender.
- Serve with the braising juices.
Notes
Allow the ribs to rest for 10-15 minutes before serving to ensure juices are reabsorbed. For added flavor, consider incorporating balsamic vinegar or Worcestershire sauce.
