Description

Tender, fall-off-the-bone beef short ribs, slow-braised to perfection, creating a comforting dish that evokes family gatherings.


Ingredients

  • 2 lbs beef short ribs
  • 1 cup organic mushrooms, chopped
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 2 sprigs fresh thyme


Instructions

  1. Season the beef short ribs with salt and black pepper.
  2. Heat olive oil in the Vitaclay cooker, and sear the ribs on all sides until browned.
  3. Remove the ribs and set aside.
  4. In the same cooker, add chopped onion and minced garlic, sauté until softened.
  5. Add chopped organic mushrooms and cook for a few more minutes.
  6. Deglaze with beef broth, scraping the bottom of the pot.
  7. Return the ribs to the cooker and add thyme.
  8. Set the cooker to the slow braise setting and cook for several hours until the meat is tender.
  9. Serve with the braising juices.

Notes

Allow the ribs to rest for 10-15 minutes before serving to ensure juices are reabsorbed. For added flavor, consider incorporating balsamic vinegar or Worcestershire sauce.
