Description

A flavorful and nutritious gluten-free bread made with red lentils and quinoa, perfect for family gatherings or quiet mornings.


Ingredients

  • 1 cup red lentils
  • 1/2 cup quinoa
  • 1 1/2 cups water
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 tablespoon olive oil (optional)
  • Herbs or spices (optional, for flavor)


Instructions

  1. Rinse the red lentils and quinoa under cold water.
  2. In a pot, combine the lentils, quinoa, and water. Bring to a boil, then reduce heat and simmer for 15-20 minutes until water is absorbed and lentils are soft.
  3. Allow to cool slightly, then transfer to a blender. Add salt, baking powder, and olive oil, and blend until smooth.
  4. Preheat the oven to 350°F (175°C) and line a loaf pan with parchment paper.
  5. Pour the mixture into the prepared loaf pan, smoothing the top with a spatula.
  6. Bake for 30-35 minutes or until golden brown and firm to the touch.
  7. Allow to cool before slicing and serving.
