Description

Deliciously soft and gooey gluten-free cinnamon rolls, perfect for any occasion.


Ingredients

  • 2 cups gluten-free all-purpose flour
  • 1/4 cup coconut sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup unsweetened almond milk
  • 1/4 cup coconut oil, melted
  • 1 tablespoon vanilla extract
  • 1/4 cup brown sugar
  • 1 tablespoon cinnamon for filling
  • 1/2 cup powdered sugar (optional for icing)
  • 1-2 tablespoons almond milk (optional for icing)


Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. In a large bowl, mix the gluten-free flour, coconut sugar, baking powder, salt, and cinnamon.
  3. In another bowl, whisk together the almond milk, melted coconut oil, and vanilla extract.
  4. Combine the wet and dry ingredients, stirring until a dough forms.
  5. Roll out the dough on a floured surface into a rectangle. Spread melted coconut oil over the dough, then sprinkle with brown sugar and cinnamon.
  6. Roll the dough tightly into a log and cut into rolls. Place them in the baking dish.
  7. Bake for 20-25 minutes or until golden brown.
  8. For the icing, mix powdered sugar with almond milk until smooth and drizzle over the rolls.
  9. Serve warm and enjoy!

Notes

For an extra touch, consider adding nuts, raisins, or apples to the filling.
