Deliciously soft and gooey gluten-free cinnamon rolls, perfect for any occasion.
Ingredients
- 2 cups gluten-free all-purpose flour
- 1/4 cup coconut sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 cup unsweetened almond milk
- 1/4 cup coconut oil, melted
- 1 tablespoon vanilla extract
- 1/4 cup brown sugar
- 1 tablespoon cinnamon for filling
- 1/2 cup powdered sugar (optional for icing)
- 1-2 tablespoons almond milk (optional for icing)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
- In a large bowl, mix the gluten-free flour, coconut sugar, baking powder, salt, and cinnamon.
- In another bowl, whisk together the almond milk, melted coconut oil, and vanilla extract.
- Combine the wet and dry ingredients, stirring until a dough forms.
- Roll out the dough on a floured surface into a rectangle. Spread melted coconut oil over the dough, then sprinkle with brown sugar and cinnamon.
- Roll the dough tightly into a log and cut into rolls. Place them in the baking dish.
- Bake for 20-25 minutes or until golden brown.
- For the icing, mix powdered sugar with almond milk until smooth and drizzle over the rolls.
- Serve warm and enjoy!
Notes
For an extra touch, consider adding nuts, raisins, or apples to the filling.
