Description

A quick and easy banana bread recipe that combines overripe bananas, cottage cheese, and chocolate chips for a delicious gluten-free treat.


Ingredients

  • 2 large overripe bananas
  • 1 cup low-fat or full-fat cottage cheese
  • 2 large eggs
  • 1/4 cup maple syrup or honey
  • 1/4 cup creamy almond butter
  • 1 ½ tsp vanilla extract
  • 1 ½ cups oat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon (optional)
  • 1/4 tsp sea salt
  • 1/2 cup mini or regular chocolate chips


Instructions

  1. Preheat the oven to 350°F and line a loaf pan with parchment paper.
  2. Add the bananas, cottage cheese, eggs, maple syrup, almond butter, and vanilla extract to a high-speed blender. Blend until smooth and creamy.
  3. Add the oat flour, baking powder, baking soda, cinnamon, and sea salt. Blend again just until combined—don’t over-blend.
  4. Fold in the chocolate chips by hand using a spatula.
  5. Pour the batter into the loaf pan and smooth out the top. Add a few extra chocolate chips on top if desired.
  6. Bake for 45–48 minutes, or until a toothpick inserted in the center comes out mostly clean with a few moist crumbs.
  7. Let cool completely in the pan before slicing for best texture.

Notes

Store wrapped in plastic or foil at room temperature for up to three days. Can be frozen for individual slices.
