Ingredients
- 4 boneless, skinless chicken breasts
- 1.5 pounds baby potatoes, halved
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
- 2 tablespoons olive oil
- Fresh parsley for garnish (optional)
Instructions
- Wash the baby potatoes and halve them to ensure uniform pieces for even cooking.
- Rub the chicken breasts with the olive oil, Italian seasoning, salt, black pepper, and optional red pepper flakes until evenly coated.
- Layer the halved potatoes at the bottom of the crockpot. Place the seasoned chicken breasts on top of the potatoes.
- Pour the chicken broth over the chicken and potatoes, ensuring everything is well coated.
- Sprinkle the minced garlic over the chicken and add the grated Parmesan cheese to cover them nicely.
- Cover the crockpot and cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender and reaches an internal temperature of 165°F (75°C) and the potatoes are fork-tender.
