Ingredients

  • 2 pounds (900g) potatoes, cut in 1 1/2 – 2 inch chunks
  • 2 tablespoons (30ml) olive oil
  • 1 teaspoon (5 ml) kosher salt
  • 3/4 teaspoon (4 ml) ground black pepper
  • 1/2 teaspoon (3 ml) Paprika
  • 2 pounds (900g) skinless, boneless chicken breasts
  • 1 cup (240ml) creamy garlic sauce
  • 1/2 cup (120ml) water or chicken stock
  • 2 cups (200g) shredded mozzarella cheese
  • 1/4 cup (25g) grated beef cheese (optional)
  • 1 tablespoon (15 ml) chopped fresh parsley, or to taste (optional)


Instructions

  1. Place the potato chunks, olive oil, 3/4 teaspoons of salt, 1/2 teaspoon of black pepper, and paprika in the base of a slow cooker, then mix until evenly coated.
  2. Lay the chicken breasts on top of the potatoes and season with the rest of the salt and pepper.
  3. In a separate bowl, combine the creamy garlic sauce with water or chicken stock, stirring until blended well.
  4. Drizzle the sauce mixture over the chicken and potatoes.
  5. Set the slow cooker to High for 4 hours, or Low for 6 hours, until the chicken is fully cooked and the potatoes are soft.
  6. In the final 20 minutes of cooking, add in the mozzarella cheese and optional grated beef cheese, keeping the lid on.
  7. Garnish with fresh parsley before serving.
