Description

A heartening bowl of Garlic Miso Noodle Soup, perfect for rainy afternoons with its comforting flavors of miso and garlic.


Ingredients

  • 1.5 tsp minced garlic
  • 2 tsp green onions (reserve 1/2 tsp for garnish)
  • 2 tsp gochugaru/chili flakes (optional)
  • 1 tsp sugar
  • 1.5 tbsp neutral oil
  • 1 tsp oyster sauce
  • 1 tsp light soy sauce
  • 1 tsp rice vinegar
  • 1.5 cups water
  • 2 tbsp miso paste (red)
  • 1 serving noodles
  • Hard boiled or jammy egg
  • Sesame seeds
  • Chili oil (optional)


Instructions

  1. Boil the noodles until cooked, and drain them. Set aside for later.
  2. In a bowl, combine the minced garlic, green onions, gochugaru (if using), and sugar.
  3. Heat 1.5 tablespoons of neutral oil in a saucepan over high heat until smoking, about 1-2 minutes. Carefully pour the hot oil into the bowl with garlic and green onions, stirring to mix.
  4. Add 1 teaspoon of light soy sauce, 1 teaspoon of oyster sauce, and 1 teaspoon of rice vinegar to the bowl. Stir until everything is well combined.
  5. Pour 1.5 cups of hot water into the same bowl. Add the 2 tablespoons of red miso paste and stir until it dissolves completely.
  6. Finally, add the cooked noodles to the soup base and mix thoroughly. Serve your Garlic Miso Noodle Soup by adding the toppings of your choice, such as a hard boiled egg, green onions, chili oil, and a sprinkle of sesame seeds.

Notes

Customize the soup by adding more miso, fresh herbs, or your favorite toppings.
