Description

A comforting and easy dish of roasted baby potatoes and mixed vegetables, infused with garlic and fresh herbs.


Ingredients

  • 1.5 lbs baby potatoes
  • 2 cups mixed vegetables (bell peppers, carrots, zucchini)
  • 3 tbsp olive oil
  • 3 cloves garlic (minced)
  • 2 tbsp fresh herbs (rosemary, thyme, parsley)
  • 1 tsp salt
  • 1/2 tsp pepper


Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Combine baby potatoes and mixed vegetables in a large bowl.
  3. Drizzle with olive oil and add minced garlic, herbs, salt, and pepper. Toss to coat evenly.
  4. Spread the mixture on a baking sheet in a single layer.
  5. Roast in the preheated oven for 25-30 minutes or until potatoes are golden and crispy, stirring halfway through.
  6. Remove from the oven and serve warm.

Notes

For added brightness, squeeze fresh lemon juice over the dish before serving. Feel free to use seasonal vegetables.
