Ingredients
- 1 lb flank steak
- 2 cups Brussels sprouts, halved
- 2 cups sweet potatoes, diced
- 3 tablespoons butter
- 4 cloves garlic, minced
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the Brussels sprouts and sweet potatoes with olive oil, salt, and pepper on a baking sheet. Roast in the oven for about 20-25 minutes until tender.
- While the vegetables are roasting, heat a skillet over medium-high heat.
- Season the flank steak with salt and pepper.
- Add butter and minced garlic to the skillet, then add the steak. Cook for about 4-5 minutes on each side for medium-rare, adjusting time for desired doneness.
- Remove the steak from the skillet and let it rest for a few minutes before slicing.
- Serve the sliced steak with roasted Brussels sprouts and sweet potatoes.
