Ingredients

  • Beef chops, 4 pieces (about 1 inch thick)
  • Salt, 1 teaspoon (5 ml) (5 grams)
  • Black pepper, 1 teaspoon (5 ml) (2 grams)
  • Vegetable oil, 2 tablespoons (30 ml) (30 milliliters)
  • Unsalted butter, 3 tablespoons (45 ml) (42 grams)
  • Garlic cloves, 6, minced
  • Fresh thyme, 4 sprigs
  • Fresh rosemary, 2 sprigs
  • Lemon, 1, sliced into wedges


Instructions

  1. Pat the beef chops dry with paper towels.
  2. Season both sides of the beef chops with salt and black pepper.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Add beef chops to the skillet in a single layer.
  5. Sear the beef chops for 4-5 minutes on each side, until browned.
  6. Reduce the heat to medium and add unsalted butter to the skillet.
  7. Once the butter melts, add minced garlic, thyme, and rosemary.
  8. Tilt the skillet slightly and spoon the butter over the beef chops.
  9. Baste the beef chops with the garlic herb butter for 2-3 minutes.
  10. Remove the beef chops from the skillet and let them rest.
  11. Arrange the beef chops on a serving platter.
  12. Serve with lemon wedges on the side for squeezing over the top.
