Description

A comforting stew featuring tender beef infused with garlic butter and served with creamy baby potatoes.


Ingredients

  • 1 pound beef stew meat
  • 1 pound baby potatoes, halved
  • 4 tablespoons garlic butter
  • 1 onion, chopped
  • 1 cup beef broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika


Instructions

  1. Place the beef stew meat and halved baby potatoes in a slow cooker.
  2. In a skillet, melt the garlic butter and sauté the chopped onion until translucent.
  3. Pour the onion mixture over the beef and potatoes.
  4. Add the beef broth, salt, pepper, thyme, and paprika, and stir to combine.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours, until the beef is tender and potatoes are cooked through.
  6. Serve warm.

Notes

For a thicker sauce, remove some cooking liquid and reduce it in a saucepan, or use a cornstarch slurry in the slow cooker.
