Description

Delightful fudgy lemon blondies that combine rich flavors with a refreshing citrus zing, perfect for any gathering.


Ingredients

  • 1/2 cup butter (melted and cooled)
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 2 eggs (room temperature)
  • 2 tbsp lemon zest
  • 1 tbsp lemon juice
  • 2 tsp vanilla extract
  • 1 tsp lemon extract
  • 1 cup all-purpose flour (sifted)
  • 1/4 tsp salt
  • 1 cup powdered sugar (for glaze)
  • 2 tbsp lemon juice (for glaze)
  • 1 tbsp lemon zest (optional, for glaze)


Instructions

  1. Preheat the oven to 350°F.
  2. Line an 8×8 inch baking pan with parchment paper.
  3. Whisk the cooled melted butter, granulated sugar, and powdered sugar together until smooth.
  4. Add in the eggs, lemon zest, lemon juice, vanilla extract, and lemon extract, mixing to combine.
  5. Fold in the sifted flour and salt until no streaks remain.
  6. Pour the batter into the prepared pan and spread it evenly.
  7. Bake for 16-17 minutes, until the center is set.
  8. Allow to cool completely before adding the glaze.

Notes

Use fresh lemons for better flavor. Don’t skip sifting the flour for a lighter texture.
