Delightful fudgy lemon blondies that combine rich flavors with a refreshing citrus zing, perfect for any gathering.
Ingredients
- 1/2 cup butter (melted and cooled)
- 1/2 cup granulated sugar
- 1/4 cup powdered sugar
- 2 eggs (room temperature)
- 2 tbsp lemon zest
- 1 tbsp lemon juice
- 2 tsp vanilla extract
- 1 tsp lemon extract
- 1 cup all-purpose flour (sifted)
- 1/4 tsp salt
- 1 cup powdered sugar (for glaze)
- 2 tbsp lemon juice (for glaze)
- 1 tbsp lemon zest (optional, for glaze)
Instructions
- Preheat the oven to 350°F.
- Line an 8×8 inch baking pan with parchment paper.
- Whisk the cooled melted butter, granulated sugar, and powdered sugar together until smooth.
- Add in the eggs, lemon zest, lemon juice, vanilla extract, and lemon extract, mixing to combine.
- Fold in the sifted flour and salt until no streaks remain.
- Pour the batter into the prepared pan and spread it evenly.
- Bake for 16-17 minutes, until the center is set.
- Allow to cool completely before adding the glaze.
Notes
Use fresh lemons for better flavor. Don’t skip sifting the flour for a lighter texture.
