Ingredients
- 2 to 3 medium-sized fresh tomatoes (1 to 1 1/2 pounds (680 g)), stems removed
- 1/2 red onion
- 2 serrano or 1 jalapeño pepper, stems, ribs, and seeds removed (less or more to taste)
- Juice of 1 lime
- 1/2 cup (120 ml) chopped cilantro
- Salt and pepper to taste
- Pinch dried oregano (crumble in your fingers before adding), or more to taste
- Pinch ground cumin, or more to taste
Instructions
- Prepare the components: Coarsely chop the tomatoes, peppers, and onion. Exercise caution when dealing with the peppers. Consider using a plastic bag or disposable gloves while handling them, or thoroughly wash your hands with soap and warm water afterward, making sure to steer clear of your eyes for several hours. Reserve some seeds from the peppers. If the salsa lacks spiciness, you can add more seeds for extra heat.
- Create the salsa: Combine all the ingredients in a food processor equipped with a blade. Pulse briefly, just enough to finely chop the ingredients without turning them into a purée. If a food processor isn’t available, you can finely chop everything manually.
- Modify the flavors: Transfer the mixture to a serving bowl. Season with salt and pepper according to your preference. If the salsa is too spicy, incorporate more chopped tomato. If it lacks heat, cautiously add some of the reserved seeds or a bit more ground cumin. You may allow the salsa to rest for an hour, either at room temperature or chilled, to let the flavors meld.
