A comforting fresh corn chowder that blends sweet corn, hearty potatoes, and savory bacon for a delicious, creamy soup perfect for any season.
Ingredients
- 4 cups fresh corn kernels
- 4 slices bacon, chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium potatoes, diced
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Chopped chives or parsley for garnish
Instructions
- Cook the chopped bacon in a large pot over medium heat until crispy. Remove and set aside, leaving drippings in the pot.
- Add the diced onion and minced garlic to the pot, cooking until softened.
- Introduce the diced potatoes and cook for a few minutes.
- Add the fresh corn and pour in the vegetable or chicken broth. Bring to a simmer and cook until the potatoes are tender, about 15-20 minutes.
- Stir in the heavy cream and season with salt and pepper to taste. Optionally, blend slightly with an immersion blender for creaminess.
- Serve hot, garnished with the reserved bacon and chopped chives or parsley.
Notes
Use fresh corn for the best flavor. Reserve some corn kernels for garnish. Optionally substitute half-and-half for a creamier texture.
