Description

A comforting fresh corn chowder that blends sweet corn, hearty potatoes, and savory bacon for a delicious, creamy soup perfect for any season.


Ingredients

  • 4 cups fresh corn kernels
  • 4 slices bacon, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium potatoes, diced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chopped chives or parsley for garnish


Instructions

  1. Cook the chopped bacon in a large pot over medium heat until crispy. Remove and set aside, leaving drippings in the pot.
  2. Add the diced onion and minced garlic to the pot, cooking until softened.
  3. Introduce the diced potatoes and cook for a few minutes.
  4. Add the fresh corn and pour in the vegetable or chicken broth. Bring to a simmer and cook until the potatoes are tender, about 15-20 minutes.
  5. Stir in the heavy cream and season with salt and pepper to taste. Optionally, blend slightly with an immersion blender for creaminess.
  6. Serve hot, garnished with the reserved bacon and chopped chives or parsley.

Notes

Use fresh corn for the best flavor. Reserve some corn kernels for garnish. Optionally substitute half-and-half for a creamier texture.
