Description
A warm and comforting classic French onion soup topped with gooey Gruyère cheese and crusty bread.
Ingredients
- 4 large onions, sliced
- 4 tablespoons butter
- 1 tablespoon olive oil
- 1 teaspoon sugar
- 1 tablespoon all-purpose flour
- 8 cups beef broth
- 2 teaspoons fresh thyme
- Salt and pepper to taste
- French bread or baguette, sliced
- 2 cups grated Gruyère cheese
Instructions
- Melt the butter and olive oil in a large pot over medium heat.
- Add the sliced onions and sugar, cooking until caramelized (about 30 minutes), stirring frequently.
- Sprinkle the flour over the onions and cook for 1-2 minutes, stirring well.
- Gradually add the beef broth, bring to a boil, then stir in thyme and season with salt and pepper.
- Reduce heat and simmer for 30 minutes.
- Preheat your broiler.
- Ladle the soup into oven-safe bowls, top each with French bread, and sprinkle generously with Gruyère cheese.
- Place the bowls under the broiler until the cheese is bubbly and golden brown.
- Serve hot.
Notes
For best results, use low-sodium beef broth and consider adding fresh herbs as a garnish.
