Description

A warm and comforting classic French onion soup topped with gooey Gruyère cheese and crusty bread.


Ingredients

  • 4 large onions, sliced
  • 4 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • 1 tablespoon all-purpose flour
  • 8 cups beef broth
  • 2 teaspoons fresh thyme
  • Salt and pepper to taste
  • French bread or baguette, sliced
  • 2 cups grated Gruyère cheese


Instructions

  1. Melt the butter and olive oil in a large pot over medium heat.
  2. Add the sliced onions and sugar, cooking until caramelized (about 30 minutes), stirring frequently.
  3. Sprinkle the flour over the onions and cook for 1-2 minutes, stirring well.
  4. Gradually add the beef broth, bring to a boil, then stir in thyme and season with salt and pepper.
  5. Reduce heat and simmer for 30 minutes.
  6. Preheat your broiler.
  7. Ladle the soup into oven-safe bowls, top each with French bread, and sprinkle generously with Gruyère cheese.
  8. Place the bowls under the broiler until the cheese is bubbly and golden brown.
  9. Serve hot.

Notes

For best results, use low-sodium beef broth and consider adding fresh herbs as a garnish.
