Description

A comforting dish that combines the rich flavors of French onion soup with hearty long-grain rice, topped with melting Gruyère cheese.


Ingredients

  • 1 cup long-grain rice
  • 4 cups beef broth
  • 2 large onions, thinly sliced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 1 cup grated Gruyère cheese
  • Fresh parsley for garnish


Instructions

  1. In a large pot, melt butter and olive oil over medium heat. Add onions and sugar, stirring occasionally until caramelized, about 15-20 minutes.
  2. Add the rice to the onion mixture and stir for 2 minutes.
  3. Pour in the beef broth, season with salt and pepper, and bring to a boil.
  4. Reduce heat to low, cover, and simmer for 18-20 minutes or until the rice is tender and the liquid is absorbed.
  5. Remove from heat, stir in half of the Gruyère cheese until melted.
  6. Serve hot, topped with the remaining cheese and garnish with fresh parsley.
