Description
A comforting dish that combines the rich flavors of French onion soup with hearty long-grain rice, topped with melting Gruyère cheese.
Ingredients
- 1 cup long-grain rice
- 4 cups beef broth
- 2 large onions, thinly sliced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 teaspoon sugar
- Salt and pepper to taste
- 1 cup grated Gruyère cheese
- Fresh parsley for garnish
Instructions
- In a large pot, melt butter and olive oil over medium heat. Add onions and sugar, stirring occasionally until caramelized, about 15-20 minutes.
- Add the rice to the onion mixture and stir for 2 minutes.
- Pour in the beef broth, season with salt and pepper, and bring to a boil.
- Reduce heat to low, cover, and simmer for 18-20 minutes or until the rice is tender and the liquid is absorbed.
- Remove from heat, stir in half of the Gruyère cheese until melted.
- Serve hot, topped with the remaining cheese and garnish with fresh parsley.
