Ingredients
- 4 large tortillas
- 6 eggs
- 1 cup cooked and crumbled sausage or cooked diced vegetables
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- Salt and pepper to taste
- Salsa or hot sauce (optional)
Instructions
- In a large bowl, whisk the eggs and season with salt and pepper.
- In a skillet over medium heat, cook the onions and bell peppers until soft.
- Add the sausage or vegetables and cook until warmed through.
- Pour the eggs into the skillet and scramble until fully cooked.
- Lay out the tortillas and divide the egg mixture evenly among them.
- Sprinkle cheese on top and add any additional toppings desired.
- Roll each tortilla tightly, folding in the sides to secure the filling.
- Wrap each burrito in plastic wrap or foil and place in the freezer.
