Description

Ingredients

  • 4 large tortillas
  • 6 eggs
  • 1 cup cooked and crumbled sausage or cooked diced vegetables
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • Salt and pepper to taste
  • Salsa or hot sauce (optional)


Instructions

  1. In a large bowl, whisk the eggs and season with salt and pepper.
  2. In a skillet over medium heat, cook the onions and bell peppers until soft.
  3. Add the sausage or vegetables and cook until warmed through.
  4. Pour the eggs into the skillet and scramble until fully cooked.
  5. Lay out the tortillas and divide the egg mixture evenly among them.
  6. Sprinkle cheese on top and add any additional toppings desired.
  7. Roll each tortilla tightly, folding in the sides to secure the filling.
  8. Wrap each burrito in plastic wrap or foil and place in the freezer.
