Ingredients
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- Additional butter for greasing the griddle
Instructions
- Whisk together the flour, sugar, baking powder, and salt in a large bowl.
- In another bowl, beat the egg and mix with the milk and melted butter.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined, leaving some lumps.
- Let the batter rest for five minutes while preheating a non-stick griddle or skillet over medium heat.
- Grease the griddle with butter and pour 1/4 cup of batter for each pancake.
- Cook until bubbles form, then flip and cook for an additional 1-2 minutes until golden brown.
Notes
For added fluffiness, separate egg whites and beat until soft peaks form, then fold them into the batter.
