Description

Delicious and airy pancakes perfect for weekend breakfasts or special occasions.


Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • Additional butter for greasing the griddle


Instructions

  1. Whisk together the flour, sugar, baking powder, and salt in a large bowl.
  2. In another bowl, beat the egg and mix with the milk and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir gently until just combined, leaving some lumps.
  4. Let the batter rest for five minutes while preheating a non-stick griddle or skillet over medium heat.
  5. Grease the griddle with butter and pour 1/4 cup of batter for each pancake.
  6. Cook until bubbles form, then flip and cook for an additional 1-2 minutes until golden brown.

Notes

For added fluffiness, separate egg whites and beat until soft peaks form, then fold them into the batter.
