Healthy and delicious energy bites made with flax and chia seeds, perfect for quick snacks and meal prep.

Ingredients

  • 1 cup rolled oats
  • 1/2 cup peanut butter (or almond butter)
  • 1/4 cup honey or maple syrup
  • 1/4 cup ground flax seeds
  • 1/4 cup chia seeds
  • 1/2 cup chocolate chips (optional)
  • 1/2 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. In a large bowl, combine all the ingredients and mix until well combined.
  2. If the mixture is too sticky, add a bit more oats or chia seeds.
  3. Once mixed, use your hands to roll the mixture into small balls, about 1 inch in diameter.
  4. Place the energy bites on a parchment-lined plate or tray.
  5. Refrigerate for at least 30 minutes to firm up.
  6. Store in an airtight container in the refrigerator for up to a week.

Notes

For added flavor, consider incorporating spices like cinnamon or cocoa powder. Store in an airtight container to maintain freshness.
