Healthy and delicious energy bites made with flax and chia seeds, perfect for quick snacks and meal prep.
Ingredients
- 1 cup rolled oats
- 1/2 cup peanut butter (or almond butter)
- 1/4 cup honey or maple syrup
- 1/4 cup ground flax seeds
- 1/4 cup chia seeds
- 1/2 cup chocolate chips (optional)
- 1/2 teaspoon vanilla extract
- A pinch of salt
Instructions
- In a large bowl, combine all the ingredients and mix until well combined.
- If the mixture is too sticky, add a bit more oats or chia seeds.
- Once mixed, use your hands to roll the mixture into small balls, about 1 inch in diameter.
- Place the energy bites on a parchment-lined plate or tray.
- Refrigerate for at least 30 minutes to firm up.
- Store in an airtight container in the refrigerator for up to a week.
