Description

Delicious and nutritious egg muffins packed with spinach and feta, perfect for a quick breakfast or meal prep.


Ingredients

  • 6 large eggs
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup milk
  • 1/2 cup bell peppers, diced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: diced onions, tomatoes, or herbs


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, whisk together the eggs and milk until well combined.
  3. Stir in the chopped spinach, feta cheese, bell peppers, salt, and pepper, mixing until evenly distributed.
  4. Pour the egg mixture evenly into the muffin tin, filling each cup about 3/4 full.
