Ingredients
- 6 large eggs
- 1 cup fresh spinach, chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup milk
- 1/2 cup bell peppers, diced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: diced onions, tomatoes, or herbs
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- In a large bowl, whisk together the eggs and milk until well combined.
- Stir in the chopped spinach, feta cheese, bell peppers, salt, and pepper, mixing until evenly distributed.
- Pour the egg mixture evenly into the muffin tin, filling each cup about 3/4 full.
- Bake for 20-25 minutes or until the muffins are set and lightly golden on top.
- Allow to cool for a few minutes before removing from the tin.
