Description

Succulent venison steaks enhanced with rich bone marrow butter, perfectly cooked in an air fryer for a simple yet delightful dish.

Ingredients

  • 2 venison steaks (about 6 oz each)
  • 2 tbsp tallow or clarified butter (for greasing)
  • Salt (to taste)
  • 1/4 cup bone marrow (from roasted beef bones)
  • 2 tbsp clarified butter (for the butter sauce)

Instructions

  1. Preheat the air fryer to 400°F.
  2. Pat the venison steaks dry with a paper towel and season generously with salt.
  3. Lightly coat the air fryer basket with tallow or clarified butter.
  4. Place the venison steaks in a single layer in the air fryer basket.
  5. Air fry for 8–10 minutes, flipping halfway through, until the internal temperature reaches 130°F for medium-rare.
  6. In a small saucepan, melt the clarified butter and stir in the bone marrow until smooth.
  7. Drizzle the bone marrow butter over the hot steaks and serve immediately.

Notes

Let the steaks come to room temperature before cooking for even cooking. Using a meat thermometer ensures perfect doneness.
