A comforting bowl of easy vegetable soup made with simple ingredients, perfect for chilly evenings.
Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 zucchini, diced
- 1 bell pepper, diced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 2 cups leafy greens (spinach or kale)
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion, diced carrots, and diced celery; sauté for 5 minutes until softened.
- Stir in minced garlic and cook for 1 additional minute.
- Add diced zucchini and bell pepper; cook for another 5 minutes.
- Pour in vegetable broth and diced tomatoes; bring to a boil.
- Add dried thyme, dried basil, salt, and pepper; reduce heat and let simmer for 20 minutes.
- Stir in leafy greens and cook for an additional 2-3 minutes until wilted.
Notes
Feel free to customize with seasonal vegetables or herbs. For added heartiness, include beans or grains.
