Description

A comforting bowl of easy vegetable soup made with simple ingredients, perfect for chilly evenings.


Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 2 cups leafy greens (spinach or kale)
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion, diced carrots, and diced celery; sauté for 5 minutes until softened.
  3. Stir in minced garlic and cook for 1 additional minute.
  4. Add diced zucchini and bell pepper; cook for another 5 minutes.
  5. Pour in vegetable broth and diced tomatoes; bring to a boil.
  6. Add dried thyme, dried basil, salt, and pepper; reduce heat and let simmer for 20 minutes.
  7. Stir in leafy greens and cook for an additional 2-3 minutes until wilted.

Notes

Feel free to customize with seasonal vegetables or herbs. For added heartiness, include beans or grains.
