Ingredients
- – 1 tablespoon (15 ml) olive oil
- – 1/2 medium onion, chopped
- – 3 cloves garlic, minced
- – 1 pound (454 g) lean ground beef
- – 1 small green bell pepper, chopped
- – 1 (14 fluid ounce) can diced tomatoes with juices
- – 1 (14 fluid ounce) can pumpkin puree
- – 1 (14 fluid ounce) can chickpeas, drained
- – 1 (14 fluid ounce) can black beans, drained
- – 2 tablespoons (30 ml) chili powder
- – 1 teaspoon (5 ml) smoked paprika
- – 1 teaspoon (5 ml) ground cumin
- – 1/4 teaspoon (1 ml) dried oregano
- – 1/2 teaspoon (3 ml) chili flakes (optional)
- – 1 cup (240 ml) vegetable broth
- – Salt & pepper to taste
- – Garnish (optional): Mexican cheese blend, cilantro, coconut cream, avocado, etc.
Instructions
- In a large pot over medium-high flame, cook the chopped onion in olive oil for about 5 minutes.
- Introduce the minced garlic and ground beef, breaking the meat apart with a spoon, and continue cooking for an additional 5 minutes.
- While onions and beef are cooking, prepare the remaining ingredients, only needing to stir occasionally.
- Incorporate the rest of the ingredients into the pot, stirring well. Turn up the heat until it starts to boil, then lower it to maintain a simmer. Let the chili cook for 10-15 minutes, stirring every so often.
- Serve it plain or with your choice of toppings.
