Ingredients

  • – 1 tablespoon (15 ml) olive oil
  • – 1/2 medium onion, chopped
  • – 3 cloves garlic, minced
  • – 1 pound (454 g) lean ground beef
  • – 1 small green bell pepper, chopped
  • – 1 (14 fluid ounce) can diced tomatoes with juices
  • – 1 (14 fluid ounce) can pumpkin puree
  • – 1 (14 fluid ounce) can chickpeas, drained
  • – 1 (14 fluid ounce) can black beans, drained
  • – 2 tablespoons (30 ml) chili powder
  • – 1 teaspoon (5 ml) smoked paprika
  • – 1 teaspoon (5 ml) ground cumin
  • – 1/4 teaspoon (1 ml) dried oregano
  • – 1/2 teaspoon (3 ml) chili flakes (optional)
  • – 1 cup (240 ml) vegetable broth
  • – Salt & pepper to taste
  • – Garnish (optional): Mexican cheese blend, cilantro, coconut cream, avocado, etc.


Instructions

  1. In a large pot over medium-high flame, cook the chopped onion in olive oil for about 5 minutes.
  2. Introduce the minced garlic and ground beef, breaking the meat apart with a spoon, and continue cooking for an additional 5 minutes.
  3. While onions and beef are cooking, prepare the remaining ingredients, only needing to stir occasionally.
  4. Incorporate the rest of the ingredients into the pot, stirring well. Turn up the heat until it starts to boil, then lower it to maintain a simmer. Let the chili cook for 10-15 minutes, stirring every so often.
  5. Serve it plain or with your choice of toppings.
