Ingredients
- – 1 cup (240 ml) white rice, uncooked
- – 1 tbsp (15 ml) olive oil
- – 1/3 cup (80 ml) onion, chopped
- – 1 small jalapeño, optional
- – 3 garlic cloves, chopped
- – 1 lb (450 g) lean ground beef
- – 15 oz (425 g) can of black beans
- – 1 tbsp (15 ml) tomato paste
- – 1/2 tsp (3 ml) salt
- – 1 tsp (5 ml) chili powder
- – 1/2 tsp (3 ml) paprika
- – 1/2 tsp (3 ml) dried oregano
- – 1/4 cup (60 ml) chipotle peppers in adobo sauce
- – 4 tbsp (60 ml) water
- – 3 tbsp (45 ml) fresh cilantro, for the guac & for garnish
- – 1 avocado
- – 1/3 cup (80 ml) salsa, for topping
- – 1/3 cup (80 ml) shredded cheese
Instructions
- Begin by preparing the rice as per the instructions on its package, which usually requires around 20 minutes for cooking.
- Then, proceed to cook the ground beef. Warm the olive oil in a skillet or non-stick pan over medium-high heat and add the ground beef. After 5-8 minutes, once the beef has browned, incorporate the spices, chopped garlic, onion, jalapeño, and tomato paste. Stir everything thoroughly.
- Use a small blender to puree the chipotle peppers with water until smooth. Combine this puree with the beef mixture, along with the drained black beans, and let it simmer for 2 minutes.
- In a separate small bowl, mash the avocado with 1 tablespoon of chopped cilantro and a pinch of salt.
- Once the meat is ready, start assembling your bowls by layering the cooked rice, beef mixture, and topping with chopped cilantro, guacamole, salsa, cheese, and any other taco toppings you prefer, such as sour cream or extra avocado.
