Description

A comforting sweet potato casserole with a creamy filling and golden marshmallow topping, perfect for family gatherings and holiday dinners.


Ingredients

  • 4 large sweet potatoes, peeled and cut into large pieces
  • 1 cup light brown sugar
  • ½ cup butter, melted
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • ½ teaspoon salt
  • ¼ teaspoon nutmeg
  • 10 ounces mini marshmallows


Instructions

  1. Boil sweet potatoes in a large saucepan of water until fork-tender, then drain.
  2. Return the sweet potatoes to the saucepan and mash until smooth.
  3. Mix in melted butter, light brown sugar, salt, cinnamon, vanilla extract, and nutmeg until well blended.
  4. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  5. Spread the sweet potato mixture evenly in the prepared baking dish and top with mini marshmallows.
  6. Bake in the preheated oven for 25-35 minutes, watching closely for golden marshmallows.

Notes

For a smoother filling, consider using a food processor. You can prepare the sweet potato filling in advance and refrigerate it for up to two days before baking.
