A comforting sweet potato casserole with a creamy filling and golden marshmallow topping, perfect for family gatherings and holiday dinners.
Ingredients
- 4 large sweet potatoes, peeled and cut into large pieces
- 1 cup light brown sugar
- ½ cup butter, melted
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon
- ½ teaspoon salt
- ¼ teaspoon nutmeg
- 10 ounces mini marshmallows
Instructions
- Boil sweet potatoes in a large saucepan of water until fork-tender, then drain.
- Return the sweet potatoes to the saucepan and mash until smooth.
- Mix in melted butter, light brown sugar, salt, cinnamon, vanilla extract, and nutmeg until well blended.
- Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Spread the sweet potato mixture evenly in the prepared baking dish and top with mini marshmallows.
- Bake in the preheated oven for 25-35 minutes, watching closely for golden marshmallows.
Notes
For a smoother filling, consider using a food processor. You can prepare the sweet potato filling in advance and refrigerate it for up to two days before baking.
