Ingredients

  • 6 bell peppers, variety of colors
  • 1 lb. (454 g) lean ground beef
  • ½ cup (120 ml) onion, diced
  • 2 tsp (10 ml) minced garlic
  • 1 cup (240 ml) cooked white rice
  • 1 tsp (5 ml) salt
  • 14 oz. (400 g) canned diced tomatoes
  • 8 oz. (225 g) tomato sauce, divided
  • 1 cup (240 ml) shredded zucchini
  • 2 tsp (10 ml) Italian seasoning
  • 1 cup (240 ml) shredded mozzarella cheese


Instructions

  1. Set your oven to 350 degrees F to preheat.
  2. In a large pot, bring water to a rolling boil. Trim the tops off the peppers and remove the seeds and inner membranes to create a hollow space. Submerge the peppers in the boiling water for 2 minutes, then lift them out to drain on paper towels.
  3. At the same time, cook the ground beef and onion in a pan until browned, then remove any excess fat. Add garlic and stir until it releases its aroma. Incorporate the cooked rice, half of the tomato sauce (reserve the other half), diced tomatoes, shredded zucchini, Italian seasoning, and salt. Mix well and heat through.
  4. Fill each of the hollowed peppers with the beef mixture, then place them in a baking dish. Drizzle about a tablespoon of the remaining tomato sauce over each pepper and cover the dish with aluminum foil.
  5. Place in the oven and bake for 10 minutes. Take off the foil and continue baking for an additional 15 minutes. Sprinkle the shredded mozzarella cheese on top and bake for another 3 minutes or until the cheese is bubbly and melted. Enjoy your meal!
