Ingredients
- 1 cup spinach, chopped
- 1 cup cottage cheese
- 1 cup gluten-free flour
- 1 teaspoon baking powder
- Salt to taste
- 1 tablespoon olive oil
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the oven to 375°F (190°C).
- Mix the chopped spinach and cottage cheese until well combined.
- Combine the gluten-free flour, baking powder, and salt in another bowl.
- Add the spinach mixture and olive oil to the flour blend and mix until a dough forms.
- Divide the dough into portions and shape into bagels.
- Place the bagels on a baking sheet lined with parchment paper.
- Brush the tops with the beaten egg.
- Bake for 20-25 minutes or until golden brown.
- Allow to cool slightly before serving.
