Ingredients

  • – 2 tablespoons (30 ml) olive oil or avocado oil
  • – 1 pound (454 g) ground beef
  • – 1 yellow onion, diced
  • – 1 green bell pepper, diced
  • – 1 red bell pepper, diced
  • – 1 jalapeno pepper, deseed and diced
  • – 1 (15 ounce (425 g)) can of diced tomatoes
  • – 1 (15 ounce (425 g)) can of tomato sauce
  • – 3 cloves garlic, minced
  • – 2 teaspoons (10 ml) chili powder
  • – 1 teaspoon (5 ml) paprika
  • – 1 teaspoon (5 ml) smoked paprika
  • – 1 teaspoon (5 ml) cayenne pepper
  • – 1 teaspoon (5 ml) cumin
  • – 2 cups (480 ml) vegetable broth
  • – 1 teaspoon (5 ml) salt
  • – 1/2 teaspoon (3 ml) black pepper


Instructions

  1. Begin by warming the oil in a Dutch oven or a large pot over medium-high heat. Add the ground beef and cook it until browned, breaking it apart with a spatula for about 6-8 minutes.
  2. Introduce the diced onion, green and red bell peppers, and jalapeño into the pot. Stir the mixture and continue to cook until the onion becomes clear, approximately 5 minutes. Mix in the minced garlic, a can of diced tomatoes, and a can of tomato sauce. Stir everything together.
  3. Incorporate the spices, salt, black pepper, and vegetable broth into the pot. Allow the mixture to reach a gentle simmer. Lower the heat to medium-low, cover with a lid, and let it cook for around 45 minutes.
  4. Switch off the heat, let the dish sit for a few minutes to cool slightly, and then serve it with your preferred toppings.
  5. Heat oil in a skillet over medium-high heat, add the ground beef, and cook, breaking it apart, for about 6-8 minutes.
  6. After turning off the heat, transfer the beef to a slow cooker along with the remaining ingredients. Cover the cooker and set it to low for 6-8 hours or high for 4-5 hours.
  7. Once finished, turn off the slow cooker and serve with your chosen toppings.
