Description

A delicious twist on traditional meatloaf, blending seasoned ground beef with zesty salsa and crunchy tortilla chips for a flavorful family meal.


Ingredients

  • 1 pound lean ground beef
  • 1 cup crushed tortilla chips
  • 1 packet taco seasoning
  • 1/2 cup shredded pepper Jack cheese
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1/4 cup salsa
  • 1/4 cup taco sauce
  • 1 egg
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the ground beef, crushed tortilla chips, taco seasoning, shredded pepper Jack cheese, diced onion, diced bell pepper, salsa, egg, salt, and pepper in a large bowl. Mix until well combined.
  3. Transfer the mixture into a greased loaf pan and shape it into a loaf.
  4. Pour the taco sauce over the top of the meatloaf.
  5. Bake in the preheated oven for 45-50 minutes, or until the internal temperature reaches 160°F (70°C).
  6. Let it rest for a few minutes before slicing.
  7. Serve hot with your choice of sides.
