Ingredients
- 1 teaspoon olive oil
- 1 medium onion, thinly sliced
- 5 boneless, skinless chicken thighs
- ⅓ cup low-carb BBQ sauce
- ½ cup shredded cheese (cheddar, mozzarella, or Colby Jack)
- Salt and pepper to taste
Instructions
- Sauté the onions: Heat olive oil in a medium skillet over medium heat. Add the thinly sliced onions and cook for about 3-4 minutes, stirring occasionally, until they soften and develop a light golden color.
- Cook the chicken: Season the chicken thighs with salt and pepper, then place them in the skillet with the onions. Cover the pan and let them cook over medium-low heat for about 2-3 minutes to lock in moisture. Remove the lid and continue cooking, flipping occasionally, until the chicken is browned and reaches an internal temperature of 165°F, which should take about 10 minutes.
- Shred and add BBQ sauce: Using two forks, shred the cooked chicken directly in the pan. Pour in the BBQ sauce and stir everything together, ensuring the chicken and onions are well coated. Let the mixture cook for an additional 1-2 minutes so the flavors blend.
- Melt the cheese: Sprinkle shredded cheese over the chicken mixture. Cover the pan and let it sit for about 1-2 minutes until the cheese is fully melted and gooey. Remove from heat and serve immediately.
