Description
This easy loaded taco beef casserole combines seasoned ground beef, colorful vegetables, and melty cheese layered between soft tortillas for a delicious and hearty meal.
Ingredients
- 1 lb lean ground beef
- 1 red bell pepper, chopped
- ½ medium onion, finely chopped
- 3 tsp taco seasoning
- 1 tsp dried oregano
- 2 cloves garlic, minced
- ½ tsp salt (omit if using salted taco seasoning)
- 2 cups jarred tomato salsa (mild or spicy, to taste)
- 1 can black beans (19 oz / 590 ml), rinsed and drained
- 6 large tortillas
- 3 cups shredded cheddar cheese
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium-high heat, cook the ground beef, chopped bell pepper, and finely chopped onion until the beef browns and the vegetables become tender.
- Stir in taco seasoning, oregano, garlic, and salt. Cook for 1 minute until fragrant.
- Add the salsa and rinsed black beans to the skillet, mixing thoroughly. Remove from heat.
- In a 9×13-inch baking dish, layer two large tortillas. Cut one tortilla in half to cover the bottom completely if needed.
- Spread one-third of the beef mixture evenly over the tortillas, followed by one-third of the shredded cheese.
- Repeat this layering process two more times, creating three layers total.
- Bake for 15–20 minutes, or until heated through and the cheese melts and bubbles.
- Let the casserole cool slightly before slicing and serving.
Notes
Customize your spice level with salsa, and feel free to use leftover ingredients. This recipe can be prepared ahead of time.
