A creamy and spicy jalapeno popper cauliflower casserole that combines flavors of traditional poppers with a healthy twist.
Ingredients
- 1 head of cauliflower, chopped
- 1 cup cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup jalapenos, diced (fresh or pickled)
- 1/4 cup green onions, chopped
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1/2 cup breadcrumbs (optional, for topping)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the chopped cauliflower, cream cheese, shredded cheddar, Parmesan cheese, diced jalapenos, green onions, garlic powder, salt, and pepper.
- Mix well until the cauliflower is well-coated with the creamy mixture.
- Transfer the cauliflower mixture into a baking dish and spread it out evenly.
- If using, sprinkle breadcrumbs on top for added crunch.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and the cauliflower is tender.

Notes
Softening the cream cheese makes it easier to mix. Adjust jalapeno quantity based on your heat preference.
