Description

A creamy and spicy jalapeno popper cauliflower casserole that combines flavors of traditional poppers with a healthy twist.


Ingredients

  • 1 head of cauliflower, chopped
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup jalapenos, diced (fresh or pickled)
  • 1/4 cup green onions, chopped
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional, for topping)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the chopped cauliflower, cream cheese, shredded cheddar, Parmesan cheese, diced jalapenos, green onions, garlic powder, salt, and pepper.
  3. Mix well until the cauliflower is well-coated with the creamy mixture.
