Ingredients
- 1 lb (454 g) ground beef, (15-20% fat content)
- 1 medium onion, finely diced
- 2 large garlic cloves, minced
- 1/4 cup (60 ml) beef broth
- 1 Tbsp (15 ml) olive oil
- 24 oz (680 g) Tomato Sauce (3 cups)
- 1/2 tsp (3 ml) sea salt
- 1/4 tsp (1 ml) black pepper, ground
- 1/4 tsp (1 ml) dried thyme
- 1/2 tsp (3 ml) granulated sugar
- 2 Tbsp (30 ml) parsley, finely chopped
- 9 lasagna noodles, cooked al dente
- 16 oz (454 g) low-fat cottage cheese
- 15 oz (425 g) low-fat ricotta cheese
- 1 large egg
- 2 Tbsp (30 ml) parsley, finely chopped, plus more to garnish
- 4 cups (450 g) mozzarella cheese, shredded, divided
Instructions
- Heat a large skillet or Dutch oven over medium-high heat, and add a tablespoon of olive oil, along with the ground beef and chopped onion. Cook, breaking up the beef, for about 5 minutes until it’s no longer pink. Stir in the minced garlic and continue cooking for another minute until you can smell the aroma.
- Pour in the beef broth, stirring for a couple of minutes until most of the liquid has evaporated. Mix in the tomato sauce, sea salt, ground black pepper, dried thyme, granulated sugar, and chopped parsley. Allow the mixture to simmer, then cover and let it cook for another 5 minutes.
- In a separate large bowl, blend together the cottage cheese, ricotta cheese, one cup of mozzarella, egg, and parsley until well combined.
- Set your oven to preheat at 375ËšF. Meanwhile, boil a large pot of water, adding salt. Cook the lasagna noodles according to package directions until they are al dente, then drain and rinse them with cold water to halt the cooking and prevent them from sticking together.
- In a deep 9×13-inch baking dish, spread half a cup of the meat mixture on the bottom. Lay down 3 lasagna noodles, cover with a third of the meat sauce, and sprinkle with a cup of mozzarella cheese. Evenly distribute and spread half of the cheese mixture on top. Repeat the layering process until there are three layers of noodles.
- Insert 9 to 12 toothpicks across the top of the lasagna to prevent the foil from adhering to the cheese. Cover the dish with foil and bake at 375ËšF for 45 minutes.
- Take off the foil and broil the lasagna for 3 to 5 minutes, or until the cheese becomes golden brown. Allow the dish to sit for 30 minutes before cutting into it.
Notes
- For a more flavorful dish, opt for ground beef containing 15-20% fat.
- Rinse the cooked lasagna noodles with cold water to prevent them from sticking.
- Layer the lasagna with alternating meat sauce, cheese mixture, and mozzarella for a well-rounded meal.
