Description

Easy Egg Bites are a versatile and satisfying breakfast or snack option, customizable to fit various tastes.


Ingredients

  • 8 eggs
  • 1/2 cup half-and-half or milk
  • 1/4 cup diced green pepper
  • 1/4 cup green onions
  • 1/4 cup chopped spinach
  • 3/4 cup diced ham or bacon (cooked), divided
  • 3/4 cup shredded cheddar cheese, divided
  • 1/4 tsp salt
  • 1/8 tsp pepper


Instructions

  1. Preheat the oven to 350°F and grease muffin tins or silicone muffin cups.
  2. In a medium mixing bowl, whisk together eggs, half-and-half or milk, salt, pepper, and half of the shredded cheddar cheese.
  3. Pour the egg mixture evenly into the prepared muffin cups.
  4. Sprinkle the remaining bacon and shredded cheese on top of each cup.
  5. Bake for 18-20 minutes, checking for doneness at the 18-minute mark.
  6. Allow to cool slightly before removing from the muffin cups, then serve warm.

Notes

Customize with various vegetables or cheese types. For best results, fill muffin cups to three-quarters full to allow for expansion.
