Easy Egg Bites are a versatile and satisfying breakfast or snack option, customizable to fit various tastes.
Ingredients
- 8 eggs
- 1/2 cup half-and-half or milk
- 1/4 cup diced green pepper
- 1/4 cup green onions
- 1/4 cup chopped spinach
- 3/4 cup diced ham or bacon (cooked), divided
- 3/4 cup shredded cheddar cheese, divided
- 1/4 tsp salt
- 1/8 tsp pepper
Instructions
- Preheat the oven to 350°F and grease muffin tins or silicone muffin cups.
- In a medium mixing bowl, whisk together eggs, half-and-half or milk, salt, pepper, and half of the shredded cheddar cheese.
- Pour the egg mixture evenly into the prepared muffin cups.
- Sprinkle the remaining bacon and shredded cheese on top of each cup.
- Bake for 18-20 minutes, checking for doneness at the 18-minute mark.
- Allow to cool slightly before removing from the muffin cups, then serve warm.
Notes
Customize with various vegetables or cheese types. For best results, fill muffin cups to three-quarters full to allow for expansion.
