Description

A recipe for light and fluffy souffle pancakes that transform breakfast into a delightful experience.


Ingredients

  • 3 eggs
  • 2 tablespoons milk
  • 1 tablespoon sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • A pinch of salt
  • Butter for cooking
  • Maple syrup or toppings of your choice


Instructions

  1. Separate the egg whites and yolks into two bowls.
  2. In the bowl with the yolks, add milk, sugar, and vanilla extract; mix well.
  3. Sift in the flour and baking powder, then mix until combined.
  4. In the bowl with the egg whites, add a pinch of salt and beat until stiff peaks form.
  5. Gently fold the egg whites into the yolk mixture in three additions.
  6. Heat a non-stick pan over low heat and add a little butter.
  7. Pour batter into the pan to form thick pancakes (using a ring mold if desired).
  8. Cover and cook for about 3-4 minutes until bubbles form on top, then flip and cook for another 2-3 minutes.
  9. Serve warm with maple syrup or your favorite toppings.
