Ingredients

  • – 3 large boneless skinless chicken breasts (about 907g), chopped into bite size pieces
  • – 2 tablespoons (30 ml) vegetable oil
  • – 1 cup corn starch (120g)
  • – 1 teaspoon (5 ml) salt
  • – 1 teaspoon (5 ml) garlic powder
  • – 1/2 teaspoon (3 ml) pepper
  • – 4 tablespoons (60 ml) hoisin sauce
  • – 4 tablespoons (60 ml) soy sauce
  • – 4 tablespoons (60 ml) rice vinegar
  • – 2 tablespoons (30 ml) sugar
  • – 1 tablespoons (15 ml) minced garlic
  • – 2 tablespoons (30 ml) water
  • – 1 teaspoon (5 ml) crushed red pepper flakes
  • – steamed or fried rice for serving


Instructions

  1. Warm the vegetable oil in a nonstick skillet over medium heat. Mix together the corn starch, salt, garlic powder, and pepper in a bowl.
  2. Place the corn starch mixture and chicken chunks in a large zip-top bag. Seal it and shake well to coat the chicken thoroughly.
  3. Transfer the coated chicken pieces into the skillet. Cook for 1-2 minutes until they are browned on the outside. (The chicken will remain uncooked inside at this stage, which is fine.)
  4. In a separate bowl, combine all the sauce ingredients and whisk them together. Pour half of this mixture into the crockpot with the chicken pieces. Cook on low for 4 hours.
  5. Just before you are ready to serve, pour the remaining sauce into the crockpot and stir gently. Serve alongside rice.

Notes

  • Consider using whole wheat or almond flour instead of corn starch for a healthier coating option.
  • Adjust the sugar amount in the sauce to suit your taste preferences.
  • For added spice, increase red pepper flakes or add sriracha to the sauce mixture.
