Ingredients

  • 1 pound (450 g) boneless, skinless chicken breasts
  • 1 cup (240 ml) chicken broth
  • 1 cup (240 ml) chopped tomatoes
  • 1 tablespoon (15 ml) olive oil
  • 1 teaspoon (5 g) ground cumin
  • 1 teaspoon (5 g) paprika
  • 1 teaspoon (5 g) garlic powder
  • 1/2 teaspoon (2.5 g) onion powder
  • 1/2 teaspoon (2.5 g) salt
  • 1/4 teaspoon (1.25 g) black pepper
  • 1 cup (150 g) diced bell peppers
  • 1 cup (150 g) chopped carrots
  • 1 cup (150 g) sliced mushrooms
  • 1 cup (150 g) frozen peas
  • 1/2 cup (75 g) chopped onions
  • 2 cups (300 g) cooked rice


Instructions

  1. Place the chicken breasts in the crockpot.
  2. Pour the chicken broth over the chicken.
  3. Add chopped tomatoes and olive oil to the crockpot.
  4. Sprinkle cumin, paprika, garlic powder, onion powder, salt, and black pepper over the mixture.
  5. Add diced bell peppers, chopped carrots, sliced mushrooms, frozen peas, and chopped onions to the crockpot.
  6. Stir the ingredients gently to combine them.
  7. Cover the crockpot with the lid.
  8. Cook on low heat for 6-8 hours or on high heat for 3-4 hours.
  9. Check the chicken for doneness; it should be tender and cooked through.
  10. Shred the chicken with two forks directly in the crockpot.
  11. Add the cooked rice to the crockpot.
  12. Stir well to combine the rice with the other ingredients.
  13. Let it heat for an additional 10-15 minutes until warmed through.
  14. Serve hot.
