Ingredients
- 1 pound (450 g) boneless, skinless chicken breasts
- 1 cup (240 ml) chicken broth
- 1 cup (240 ml) chopped tomatoes
- 1 tablespoon (15 ml) olive oil
- 1 teaspoon (5 g) ground cumin
- 1 teaspoon (5 g) paprika
- 1 teaspoon (5 g) garlic powder
- 1/2 teaspoon (2.5 g) onion powder
- 1/2 teaspoon (2.5 g) salt
- 1/4 teaspoon (1.25 g) black pepper
- 1 cup (150 g) diced bell peppers
- 1 cup (150 g) chopped carrots
- 1 cup (150 g) sliced mushrooms
- 1 cup (150 g) frozen peas
- 1/2 cup (75 g) chopped onions
- 2 cups (300 g) cooked rice
Instructions
- Place the chicken breasts in the crockpot.
- Pour the chicken broth over the chicken.
- Add chopped tomatoes and olive oil to the crockpot.
- Sprinkle cumin, paprika, garlic powder, onion powder, salt, and black pepper over the mixture.
- Add diced bell peppers, chopped carrots, sliced mushrooms, frozen peas, and chopped onions to the crockpot.
- Stir the ingredients gently to combine them.
- Cover the crockpot with the lid.
- Cook on low heat for 6-8 hours or on high heat for 3-4 hours.
- Check the chicken for doneness; it should be tender and cooked through.
- Shred the chicken with two forks directly in the crockpot.
- Add the cooked rice to the crockpot.
- Stir well to combine the rice with the other ingredients.
- Let it heat for an additional 10-15 minutes until warmed through.
- Serve hot.
