Ingredients
- 4 large flour tortillas
- 2 cups cooked chicken (shredded)
- 8 slices bacon (cooked and crumbled)
- 2 cups Mexican cheese blend (shredded)
- 1/2 cup ranch dressing
- 1 cup tomatoes (diced)
- 1/4 cup red onion (finely chopped)
- 2 tbsp fresh cilantro (chopped)
- 2 tbsp butter (for cooking)
Instructions
- Mix the shredded chicken with ranch dressing until evenly coated.
- Add the crumbled bacon, diced tomatoes, finely chopped onion, and cilantro to the chicken mixture. Stir to combine thoroughly.
- Lay out one flour tortilla and sprinkle a layer of Mexican cheese blend across one half.
- Spoon a generous amount of the chicken mixture over the cheese, then sprinkle more cheese on top.
- Fold the tortilla in half, pressing gently to compact the filling.
- Heat 2 tablespoons of butter in a skillet over medium heat.
- Carefully place the quesadilla in the skillet. Cook for 2-3 minutes per side until golden brown and crispy.
- Repeat the process with the remaining tortillas and fillings.
