Ingredients

  • 3 boneless, skinless chicken breast halves
  • 1 (226 g) package penne pasta
  • 1/2 (240 g) jar Alfredo sauce
  • 1 1/2 cups shredded mozzarella cheese, divided (170 g)
  • 1/4 cup milk (60 ml)
  • 1 tbsp (15 ml) onion powder
  • 1 tbsp (15 ml) garlic powder
  • 1 cup (240 ml) shredded alternative cheese


Instructions

  1. Set your oven to 350°F (175°C) to preheat.
  2. Fill a pot with water, add the chicken, and bring it to a rolling boil over high heat; then lower the heat and let it simmer until the chicken is cooked through and the juices are clear, approximately 15 minutes.
  3. Simultaneously, in another large pot, bring lightly salted water to a boil. Add the penne pasta and cook, stirring occasionally, until it is al dente, roughly 11 minutes. Once done, drain the pasta.
  4. Once the chicken is cooked, drain the water and cut the chicken into small, bite-sized pieces.
  5. In a large bowl, combine the chicken pieces, cooked pasta, Alfredo sauce, half of the shredded mozzarella cheese, milk, onion powder, and garlic powder, and mix everything together thoroughly.
  6. Transfer the mixture into a 1 1/2-quart baking dish. Sprinkle the remaining mozzarella cheese and shredded alternative cheese on top.
  7. Place the dish in the preheated oven, baking until the cheese is melted and the dish is bubbling, which should take about 25 minutes.
