Ingredients
- 1 pound (454 g) ground beef (450 grams)
- 1 tablespoon (15 ml) vegetable oil (15 milliliters)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon (5 ml) ground cumin
- 1 teaspoon (5 ml) chili powder
- 1/2 teaspoon (3 ml) salt
- 1/2 teaspoon (3 ml) black pepper
- 8 corn tortillas
- 1 1/2 cups (360 ml) tomato sauce (355 milliliters)
- 2 cups (480 ml) shredded cheddar cheese (200 grams)
- 1 cup (240 ml) shredded mozzarella cheese (100 grams)
- 1/4 cup (60 ml) chopped fresh cilantro (15 grams)
- 1/4 cup (60 ml) sliced green onions (25 grams)
Instructions
- Preheat your oven to 350°F (175°C).
- Heat the vegetable oil in a large skillet over medium heat.
- Add the diced onion and minced garlic to the skillet.
- Sauté until the onion becomes translucent, about 3-4 minutes.
- Add the ground beef to the skillet.
- Cook the beef until browned, about 7-8 minutes, breaking it apart with a spoon.
- Stir in the ground cumin, chili powder, salt, and black pepper.
- Mix well and cook for an additional 2 minutes.
- Remove the skillet from heat and set aside.
- Pour 1/2 cup of enchilada sauce into a 9×13 inch (23×33 cm) baking dish.
- Spread the sauce evenly over the bottom of the dish.
- Warm the corn tortillas in a microwave or skillet until pliable.
- Place a tortilla on a flat surface and add 2-3 tablespoons of the beef mixture.
- Sprinkle some cheddar cheese on top of the beef mixture.
- Roll up the tortilla tightly and place it seam-side down in the baking dish.
- Repeat with remaining tortillas and beef mixture.
- Pour the remaining enchilada sauce over the rolled tortillas.
- Sprinkle the rest of the cheddar cheese and all of the Monterey Jack cheese over the top.
- Cover the dish with aluminum foil.
- Bake for 20 minutes in the preheated oven.
- Remove the foil and bake for an additional 5-10 minutes until the cheese is bubbly and golden.
- Remove the dish from the oven and let it cool for a few minutes.
- Garnish with chopped cilantro and sliced green onions.
- Serve the enchiladas warm.
