Description

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups cold milk
  • 1/4 cup melted butter (or canola oil)
  • 1 teaspoon vanilla extract
  • 2 eggs (beaten)


Instructions

  1. In a large mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, mix together the wet ingredients: milk, melted butter, vanilla extract, and beaten eggs.
  3. Carefully combine the wet and dry mixtures, stirring until just blended. Lumps are fine.
  4. Preheat the waffle iron according to manufacturer instructions and grease lightly if necessary.
  5. Pour the batter onto the preheated waffle iron and close the lid.
  6. Cook for about 5 minutes, or until golden brown and crispy.

Notes

For a healthier twist, substitute half the all-purpose flour with whole wheat flour or oat flour.
