Ingredients
- 1 lb ground beef (454 g)
- 2 cans (600 g) mild red enchilada sauce
- 1 can (113 g) chopped green chiles
- 1 package (232 g) flour tortillas for soft tacos and fajitas (10 Count)
- 1 1/2 cups (150 g) shredded cheddar cheese
Instructions
- Preheat your oven to 375°F and lightly coat a 13×9-inch baking dish with a nonstick spray.
- In a 10-inch skillet, cook the ground beef on medium-high heat for 5 to 7 minutes, stirring occasionally until it’s fully browned; then remove any excess grease. Mix in 1/2 cup of enchilada sauce and the chopped green chiles.
- Pour 1/2 cup of the enchilada sauce evenly across the bottom of the prepared baking dish. Place 1/4 cup of the beef mixture in the center of each tortilla, then sprinkle with 1 tablespoon of cheddar cheese. Roll up the tortillas snugly around the filling and place them seam-side down in the dish. Cover with the remaining enchilada sauce. Scatter the leftover cheese on top.
- Bake in the oven for 20 to 25 minutes or until everything is heated through and the cheese is bubbly. Allow to rest for 5 minutes before serving.
