Description

Ingredients

  • 1 lb ground beef (454 g)
  • 2 cans (600 g) mild red enchilada sauce
  • 1 can (113 g) chopped green chiles
  • 1 package (232 g) flour tortillas for soft tacos and fajitas (10 Count)
  • 1 1/2 cups (150 g) shredded cheddar cheese


Instructions

  1. Preheat your oven to 375°F and lightly coat a 13×9-inch baking dish with a nonstick spray.
  2. In a 10-inch skillet, cook the ground beef on medium-high heat for 5 to 7 minutes, stirring occasionally until it’s fully browned; then remove any excess grease. Mix in 1/2 cup of enchilada sauce and the chopped green chiles.
  3. Pour 1/2 cup of the enchilada sauce evenly across the bottom of the prepared baking dish. Place 1/4 cup of the beef mixture in the center of each tortilla, then sprinkle with 1 tablespoon of cheddar cheese. Roll up the tortillas snugly around the filling and place them seam-side down in the dish. Cover with the remaining enchilada sauce. Scatter the leftover cheese on top.
  4. Bake in the oven for 20 to 25 minutes or until everything is heated through and the cheese is bubbly. Allow to rest for 5 minutes before serving.
