Description

A nostalgic banana bread recipe that produces a moist, flavorful loaf using overripe bananas.


Ingredients

  • 2 cups flour
  • 1-1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1-1/2 cups mashed bananas (3-5 bananas depending on their size)
  • 1 cup white sugar
  • 2 eggs
  • 1/2 cup oil


Instructions

  1. Preheat the oven to 350°F and grease a loaf pan with nonstick cooking spray.
  2. Add flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a small bowl and mix well. Set aside.
  3. Combine sugar, oil, eggs, and mashed bananas in a larger mixing bowl and mix well.
  4. Add the flour mixture to the wet ingredients and mix just until combined.
  5. Pour the batter into the prepared pan.
  6. Bake for 45-55 minutes or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and cool completely before cutting.

Notes

For added flavor, consider mixing in nuts or chocolate chips. If browning too quickly, tent with foil for the last 15 minutes.
