Ingredients

  • 1 tablespoon sesame oil
  • 2 teaspoons fresh ginger, minced
  • 3 garlic cloves, minced
  • 6 cups low-sodium vegetable broth
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon chili garlic sauce (optional)
  • 1 cup mushrooms, sliced
  • 3 cups baby bok choy or spinach, chopped
  • 1216 frozen dumplings or potstickers
  • 2 green onions, chopped
  • 1 tablespoon toasted sesame seeds
  • Black pepper, to taste
  • Red pepper flakes (optional)


Instructions

  1. Heat sesame oil in a large pot over medium heat.
  2. Add minced ginger and garlic, sautéing for 1–2 minutes until fragrant.
  3. Stir in vegetable broth, soy sauce, rice vinegar, and optional chili garlic sauce and bring to a gentle boil.
  4. Add sliced mushrooms and simmer for 3–4 minutes until tender.
  5. Stir in bok choy or spinach and let wilt for 2–3 minutes.
  6. Add frozen dumplings and simmer for 5–7 minutes until cooked through.
  7. Serve hot, garnishing with green onions, sesame seeds, black pepper, and optional red pepper flakes.
