Classic French Duchess Potatoes transform Yukon Gold potatoes into an elegant and creamy side dish perfect for any occasion.
Ingredients
- 2 pounds Yukon Gold potatoes
- 4 tablespoons unsalted butter
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 large egg yolks
- Salt to taste
- Pepper to taste
- Pinch of nutmeg (optional)
- 1 egg (for egg wash)
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and cut the Yukon Gold potatoes into uniform chunks.
- Place the chunks into a pot of salted water and bring it to a boil. Cook for about 15-20 minutes, until tender.
- After draining, return the potatoes to the pot and mash until completely smooth.
- Mix in butter, heavy cream, Parmesan cheese, egg yolks, salt, pepper, and nutmeg until well combined.
- Transfer the mixture into a piping bag fitted with a star nozzle.
- Pipe the potato mixture into swirls on a lined baking sheet.
- Brush the tops of the swirls with a beaten egg.
- Bake for 20-25 minutes, or until golden brown.
