Description

Duchess Potatoes offer a delightful combination of creamy texture and crispy edges, transforming classic mashed potatoes into an elegant side dish.


Ingredients

  • 2 pounds russet potatoes, peeled and cubed
  • ½ cup unsalted butter, softened
  • ½ cup heavy cream
  • 2 egg yolks
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley or chives for garnish (optional)
  • 1 tablespoon olive oil (for greasing the baking sheet)


Instructions

  1. Cook the potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain well and let steam dry for a couple of minutes.
  2. Mash the potatoes until smooth in a large mixing bowl.
  3. Incorporate the softened butter and heavy cream, mixing thoroughly for a creamy consistency.
  4. Add the egg yolks, garlic powder, onion powder, salt, and pepper, blending until completely combined.
  5. Fill a piping bag fitted with a star tip and pipe small mounds onto a greased baking sheet.
  6. Bake at 400°F for about 20-25 minutes or until golden brown on the edges.
