Ingredients
- 2 pounds russet potatoes, peeled and cubed
- ½ cup unsalted butter, softened
- ½ cup heavy cream
- 2 egg yolks
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Fresh parsley or chives for garnish (optional)
- 1 tablespoon olive oil (for greasing the baking sheet)
Instructions
- Cook the potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain well and let steam dry for a couple of minutes.
- Mash the potatoes until smooth in a large mixing bowl.
- Incorporate the softened butter and heavy cream, mixing thoroughly for a creamy consistency.
- Add the egg yolks, garlic powder, onion powder, salt, and pepper, blending until completely combined.
- Fill a piping bag fitted with a star tip and pipe small mounds onto a greased baking sheet.
- Bake at 400°F for about 20-25 minutes or until golden brown on the edges.
