Ingredients
- 1/2 cup (120 ml) extra virgin olive oil
- 1/2 cup (120 ml) apple cider vinegar
- 1/2 cup (120 ml) finely chopped cilantro
- 2/3 cup (160 ml) finely chopped parsley
- 1/4 cup (60 ml) finely chopped onion
- 5 garlic cloves, peeled and minced
- 1 tablespoon (15 ml) fresh or dried oregano
- 1 1/2 teaspoon (8 ml) s kosher salt, not fine table salt
- 1/4 teaspoon (1 ml) crushed red pepper
- 4 Ribeye or New York steaks, at least 1” thick
- Kosher salt and freshly ground black pepper
- Garlic powder
Instructions
- Create Chimichurri Sauce: Mix together all the ingredients in a bowl and stir thoroughly. Allow it to sit for at least 10 minutes so the flavors can blend. If preparing in advance, cover it well and refrigerate until needed. It can be prepared 1-2 days beforehand.
- Get the Steaks Ready: Pat the chilled steaks dry with paper towels. Evenly season all sides with kosher salt, black pepper, and garlic powder.
- Grill: Prepare the grill by oiling it well and heating it to a high temperature until it starts to smoke. When it is very hot, place the steaks on the grill for 3 minutes on one side without moving them. Lightly coat the tops of the steaks with oil, flip them over, and grill for another 2 minutes.
- Check Doneness: Once the steaks have browned and have nice grill marks, perform the “press test” by gently pressing the centers with a finger or utensil. They should be slightly springy, not too soft or too firm. If they seem too soft, grill for another minute. For medium-rare, the centers should feel like the fleshy area near your thumb when making a loose fist.
- Let Rest: Transfer the steaks to a cutting board and allow them to rest for 5 minutes before slicing. Avoid cutting or piercing them during this time to retain the juices and allow the steaks to finish cooking as they rest.
- Present: Slice the steaks against the grain and serve with generous amounts of chimichurri sauce drizzled over them.
