Ingredients

  • 1 teaspoon (5 ml) olive oil
  • 1 pound (454 g) mild beef sausage
  • 1 small white onion, diced
  • 2 cloves garlic, minced
  • 4 ounce (113 g) s cream cheese
  • 1 10 ounce (283 g) can diced tomatoes with green chiles
  • 1 cup (240 ml) froz en chopped spinach, defrosted and drained well
  • 1 cup (240 ml) monterey jack cheese, shredded
  • Tortilla chips, for serving


Instructions

  1. Set your oven to 350°F to preheat.
  2. In a big frying pan, warm up the olive oil over medium-high heat. Toss in the mild beef sausage and the diced onion. Cook, breaking the sausage apart, until the onion is clear and the sausage is fully cooked. Drain excess liquid and place back in the pan. Mix in the garlic and cook until you can smell it, roughly 30 seconds. Add in the cream cheese, diced tomatoes with green chiles, and thawed spinach. Stir until the cream cheese is fully blended. Take off the heat and mix in about half of the shredded Monterey Jack cheese.
  3. Put the mixture into an 8×8-inch baking dish and top with the remaining cheese.
  4. Bake for approximately 15 minutes until it starts to bubble. Serve hot alongside tortilla chips.
