Ingredients
- 1 tablespoon vegetable oil (15 ml)
- 1 large yellow onion, halved and sliced 1/2-inch thick (125 g)
- 1 teaspoon (5 ml) salt, divided
- 1 medium red bell pepper, halved and sliced 1/2-inch thick (150 g)
- 1 clove garlic, minced
- 1 pound ground beef (450 g)
- 1/2 teaspoon (3 ml) freshly ground black pepper
- 8 ounces dry rotini pasta (225 g)
- 2 cans low-sodium chicken broth (14.5 ounces or 430 ml each)
- 1 1/2 cups shredded mozzarella cheese, divided (4 1/2 ounces or 125 g)
- 1 1/2 cups shredded cheddar cheese, divided (4 1/2 ounces or 125 g)
Instructions
- Warm the vegetable oil in a 10-inch skillet with high sides on medium-high heat until it begins to glisten. Toss in the sliced onion and half of the salt, sautéing until it starts to soften and take on a golden color, which should take about 5 minutes. Add the sliced bell pepper and minced garlic, cooking for another 2 to 3 minutes until the peppers are tender and the garlic releases its aroma. Incorporate the ground beef, black pepper, and the remaining salt, breaking the meat into small bits with a wooden spoon, and cook until it’s browned with no pink visible, about 5 to 7 minutes.
- Mix the dry rotini pasta into the beef and onion mixture. Pour in the chicken broth, cover the skillet, and bring to a boil. Remove the cover and continue cooking for 20 to 25 minutes, stirring occasionally, until the pasta is tender and most of the liquid has evaporated. Meanwhile, position an oven rack in the center and preheat the broiler to high.
- Blend half of the shredded mozzarella and cheddar cheeses into the pasta. Scatter the remaining cheese over the surface. Broil until the cheese melts and achieves a golden-brown hue, approximately 2 to 3 minutes.
